What you are sleeping on now. Your height and weight. Where you hurt when you wake up. Whether you like a bed that holds you up or one you sink into. That is the whole fitting. Heavier people need a firmer bed, shoulder pain usually wants softer, lower back pain usually wants firmer, and a couple who disagree can have one firmness on each side.
Then you order online or on the phone, whichever you prefer. About half of our customers do each.
